An IPA with saison yeast? IPAison? Not sure what to call it. We take our IPA grain bill, add Centennial and Amarillo hops, then ferment with saison yeast. Oats and wheat are added for body to balance out the naturally dry finish of the yeast. Actually we do know what to call it—delicious.
